Becky Lee Simmons uses the freshest ingredients from local ranchers, farmers and fisherman across the country. A Culinary Institute of America, Hyde Park, New York graduate in 1986, Becky Lee consistently crafts such seasonal gifts such as seared day boat scallops with smoked bacon and pea tendrils, roast duck with satsuma tangerine confit, maine shrimp braised in beurre fondu with gnocchi and seared halibut with parsnip spaetzle. A northern California native, Chef Simmons' take on classic American cuisine has earned her national acclaim, and has helped secure Katahdin the reputation of " A truly sublime experience."
